Blogger News: Quick Meals for Halloween Night 14.10.15

Fun, kid-friendly ideas that will give you more time to get everybody ready for a spooky-night trek through the neighborhood.

Have you been wondering what to feed your little goblins before they head out to trick or treat? Naturally, you’ll want to keep it fast, filling, healthy and simple, so I’ve come up with some fun, kid-friendly ideas that will give you more time to get everybody ready for a spooky-night trek through the neighborhood.

What child doesn’t love mac and cheese? Red Lentil Mac-and-Cheese and Stovetop Whole Wheat Macaroni and Cheese are quick and easy. Another idea is to purchase a box of macaroni and cheese, cook according to package instructions; add some green beans or broccoli, and sliced hot dogs.

While not all soups get great reviews from kids, you can bet chicken noodle soup is an all-time favorite. Make it simple with organic chicken broth, chopped celery, onion, carrots and store-bought rotisserie chicken. Add some thin noodles, such as angel hair pasta, and you’ve got a great meal in no time. Round it out with hot and crusty whole grain garlic bread or toast. Our Simple Chicken Noodle Soup is sure to please.

Turkey tacos (or tostados) are fun, crunchy and tasty. Simply brown ground turkey in a little olive oil; add packaged taco seasoning; spoon into crunchy corn taco shells or over tostado shells. Top with shredded cheese, lettuce, tomatoes and salsa. Serve with heated, canned vegetarian refried beans and Spanish rice cooked from a box. Here’s a simple recipe forGround Turkey Tacos.

Hot dogs seem to always be a hit with kids. With so many choices from beef to chicken to turkey to tofu, there’s something for everyone. Heat up hot dogs to serve in buns or, for something a little different, wrap in corn or flour tortillas with all of the favorite fixings such as mustard, mayo, ketchup, pickles, etc. Complete the meal with prepared thick and chunky vegetable soup or coleslaw.

Grilled cheese and a cup of soup will hit the spot and keep your tots warm on a cool Halloween night. Carrot and Cheddar Grilled Cheese is hearty and pairs perfectly with a cup of tomato soup.
